Kari Ketam

~ KARI KETAM ~

Bahan-bahannya:

1 kg ketam, dibersihkan

4 sudu besar rempah kari ikan

garam secukup rasa

serbuk perasa jika suka

minyak untuk menumis

daun pudina

daun kari

daun ketumbar

2 biji telur (dipukul sekejap)

airBahan untuk dikisar:

2 biji bawang besar

1 ulas bawang putih

1 inci haliaLET’S DO IT:

1. Panaskan minyak dalam periuk. Tumis bahan yang telah dikisar dan daun kari sehingga naik bau.

2. Masukkan rempah kari kacau hingga sedikit garing . Kemudian masukkan air dan gaul sebati.

3. Masukkan garam, serbuk perasa , ketam dan telur. Gaul rata dan tutup periuk selama 5 – 10 minit sehingga ketam bertukar warna.

4. Akhir sekali bila kuah sedikit kering, letakkan daun pudina dan daun ketumbar.

5.Balik-balikkan supaya semuanya sebati. .Padamkan api, angkat dan hidangkan.

~Quiche with Cream Cheese Pastry~

Bahan:

125g cream cheese

125g butter, chopped (if using unsalted butter, add 1/4 teaspoon fine table salt with the butter)

190g (1 1/4 cups) plain flour

160g shaved leg ham, finely chopped

150g (1 1/2 cups, firmly packed) grated tasty cheddar cheese

5 large eggs (we use eggs with a minimum weight of 59g)

62ml (1/4 cup) cream

1/2 medium onion, finely chopped

1/4 teaspoon ground nutmeg

Salt and pepper, to taste

LET’S DO IT:

Place cream cheese and butter in a food processor and beat on low speed until mixture is smooth and creamy.Scrape down sides of processor. Add flour and process just until mixture starts to clump together.

Grease a 24cm diameter pie plate and line the base with a circle of baking paper. Using your fingers, press the pastry over the base and sides of the pie plate.Refrigerate while preparing filling.

Adjust the oven rack to the lowest shelf position. Preheat oven to 190 degrees Celsius (not fan forced).

Using a fork or whisk, beat eggs, cream, nutmeg, salt and pepper together in a medium bowl until combined.Sprinkle about half the grated cheese over the base of the pastry case.Sprinkle with half the chopped onion and cover with the chopped ham.Sprinkle with the remaining onion and cheese. Pour over the egg mixture.

Place quiche on the lowest shelf in the oven (being close to the bottom element will help brown the pastry base) and cook for about 50 minutes, or until the filling is golden and set. Set aside for five minutes to firm up before slicing.

Mee Goreng Basah

1 kg mee kuning

1 biji bawang besar – kisar

3 biji bawang putih –kisar

2 sb pes lada kering

1 sb kicap cair

2 sb kicap manis

2 sb sos tiram

Udang

fish cake

3 pokok sawi

air secukupnya

Cara-cara

Panaskan minyak. Tumis bahan2 kisar hingga naik bau. Masukkan pes lada tumis sekejap. Masuk udang & fish cake gaulkan sebati.

Masukkan ,sos tiram,kicap pekat,kicap cair dan garam. Kacau biar serata.

Masuk air dan biar menggelegak. Rasa cukup semua bahan perasa. Adjust ikut selera anda. Masukkan mee kuning & gaul sebati. Masukkan pula sawi (daun shj), kalau nmpak air mcm dah kering atau tak cukup basah blh tambah lagi air .Kecilkan api & biar selama 4minit. Kemudian gaul2 sekejap,bila semua perasa dah meresap dalam mee, tutupkan api. Alihkan mee kuning dari kuali, jgn biarkan dlm kuali, air mee akan kering. Makan panas2 bersama lada jeruk,taburkan dgn daun bawang & bawang goreng.
