tak ada keja ..kemas2 kat dapur npk pulut dan kacang black-eyed bean..bestkan kalau buat lepat.tapi daun janur tak ada hanya daun pisang yg ada kat umah …so guna jelah daun pisang tu untuk buat lepat kacang…senang je nak buat lepat kacang daun pisang ni.. untuk membuat lepat pertama kali sediakan daun pisang . Gunakan lap kering untuk membersihkannya. Potong dengan ukuran kurang lebih 30 x 20 cm.( suka2 hatilah nak mcm mana ukuran). Sediakan lidi untuk menyemat. - Ambil 2 lembar daun pisang dan buat gulungan  serupa bentuk silinder.  Semat satu ujung daun menggunakan lidi. - Masukkan pulut dalam gulungan daun pisang sampai penuh  gulungan kemudian semat ujung yang lain menggunakan lidi. kalau tak nak  blh ikat kedua2 hujungnye  dgn tali…
Bahan2..

*500g beras pulut
*250g kacang black eyed bean - di remdam dahulu 6 jam
*250g kelapa parut muda- yg putih je..
*garam
daun pisang
gaul kesemua * bahan2..dan masukkan beras pulut ke dalam daun pisang yg dah di gulung tadi dan blh di rebus...

Lemang (Lemang Moden)  or Glutinous Rice Cooked In Bamboo

Ingredients:
600ml Glutinous Rice, wash and drain off excess water
1 Can (400ml) Coconut cream
200ml Water
1 Screwpine leaf or pandan leaf, knotted
Salt, to taste
Banana leaves
Cooking string
Directions:
1. Put the coconut cream, water, knotted screwpine leaf and salt into a pot. Bring to a quick boil. Add the glutinous rice. Stir until the glutinous rice has absorbed the coconut cream mixture and no liquid is left. Turn off the heat and put it aside to cool.
2. Wipe clean your banana leaves and lay ithem flat on the work surface, with the lines on the leaf running from left to right.
3. Divide the glutinous rice mixture into 5 parts.
4. Ladle the glutinous rice mixture onto the leaves. Roll them into a cylindrical shape and secure both ends with cooking string, making sure there is no tear in the banana leaves.
5. Bring a large pot of water to the boil, and gently submerge the wrapped lemang into the water. Boil for at least 20-30 minutes (this process will further cook the glutinous rice).
6. Preheat the oven to 180° C (350° F).
7. Transfer the lemang into the oven and bake for another 20-25 minutes, until the banana leaf wrappers are slightly dried out.
8. Leave them to cool before slicing

Kuih Chang /Savoury Rice Dumplings

Ingredients:
(make 30 pieces)
1 kg chicken , lamb or mutton - cut into bite size
50 pcs dried chestnuts (size uneven, soak and boil for 15 mins, remove membrane bits in slits)
30 salted duck egg yolks 
60 dried shitake mushrooms (soak in water to soften and trim the stem)
2 bulbs of garlic (finely chopped) 
150g dried shrimp (soak in water for 10 mins, roughly chopped)
1.5 kg glutinous rice (soak in water overnight, drain rice)
200ml cooking oil
Marinate  chicken , lamb or mutton  :
1. Add 3 tbsp sugar, 5 tbsp dark soy sauce, 5 tbsp light soy sauce, 5 tbsp five spice powder, 2 tbsp cajun seasoning and 1 tbsp  of pepper. Mix well and marinate overnight in fridge. 
Step:
1. To prepare filling: heat oil in wok, stir fry marinated  chicken , lamb or mutton  for 5 mins, add dried mushrooms and dried chestnuts. Add 150ml water and let it simmer for another 15 mins or untill the meat  is cook . Set aside. 

2. To prepare glutinous rice: add 200ml oil into the wok used in (1). Add garlic and dried shrimp, stir-fry until fragrant. Add glutinous rice, mix well.
Sufficient oil added will ensure the rice wouldn't stick on the bamboo leave later.
Add 4 tbsp light soy sauce and 4 tbsp dark soy sauce. (Depends on how dark and salty you want the rice dumpling to be)
3. To assemble: Overlap two pieces of bamboo leaves, make a cone shape and press in a spoonful of rice, top with filling, salted duck egg yolks and cover with rice again, spoon some gravy from the filling onto the rice, wrap up the rice dumplings and tie with grass strands. 

4. To Boil: Prepare a big pot of water, add 2 tbsp of salt, when water boiled, lower down the rice dumplings, boil for at least 1 hour. The water level has to be always above the rice dumplings. Take out the rice dumplings while it is done, dip dry the rice dumplings by hanging.

Kuih Chang # 3 ~ Chinese Rice Dumpling ~

Kuih Chang #3


Bahan2:
Beras pulut _ cuci dan toskan [ ady rendam 1 jam]
Daun pandan / Daun buluh kering ( ady guna daun buluh/ rebus dan cuci).
Pengikat Chang _ rendam terlebih dahulu sblm d gunakan.
Bahan2 Inti:
Dada ayam _ [ yang ni ady guna 1kg Daging Tetal direbus sampai lembut dan potong kecil² dan ½ kg daging kisar]
Dried mushrooms _ rendam dan potong kecil ²
Dried chestnuts _ Rebus dan buang sisa kulit yg masih ada
Rebung dlm tin _ hiris kecil²[ady tak letak]
Preserved Vegetable [ady tak letak]
Bawang merah _ cincang halus
Bawang putih _ cincang halus
Serbuk lada hitam
1 sudu besar cili kisar[ yg ni ady tambah nak kasi pedas2 ]
Garam
Kicap pekat
2 sudu besar minyak bijan [ ady tambah ]
**Boleh juga d campur dengan bhn² spt... daging... udang kering... scallops...salted egg yolk... dan terpulang ler kan citarasa masing²
Cara²
1*Panaskan sedikit minyak.. tumiskan bwg merah , bwg putih dan cili kisar hingga wangi.
2*Masukkan daging tetal , daging kisar , mushrooms dan chestnuts... Masak seketika.
3*Campurkan garam, kicap pekat ,minyak bijan dan serbuk lada hitam.
4*Masak hingga bhn² empuk dan sedikit garing.
5*Angkat dan biarkan sejuk seketika _ ketepikan.
Cara² Menyediakan Berasnya:
1*Tumiskan bawang merah dan bawang putih dgn sedikit minyak hingga wangi.
2*Masukkan beras pulut, garam minyak bijan dan kicap pekat. Masak seketika.
3*Angkat
Bungkuskan beras pulut berintikan bhn ² yg telah d masak tadi. Rebus sehingga beras pulut betul2 masak.. Biasanya tidak kurang dr 1 jam 30 min. [ ady rebus 2 jam]
