Roasted Leg of Lamb with Vegetables

Roasted Leg of Lamb with Vegetables

1 (8 to 10-pound) leg of lamb, boned*, reserving bones
Kosher salt
8 sprigs rosemary, finely chopped (about 1/4 cup)
6 cloves garlic, thinly sliced
Extra-virgin olive oil

For the veggies:
1 red pepper- Cut the red peppers in half, remove the stem and seeds
4 carrots, cut on the diagonal
1 lemon, cut in 1/2
12 baby artichokes
2 bulbs fennel, cut into 1/4-inch slices
2 pounds red bliss potatoes, about 20, cut into quarters
10 whole garlic cloves
1/2 teaspoon crushed red pepper
Extra-virgin olive oil
Kosher salt
1  Beef Stock
1 bundle thyme, about 10 sprigs tied together with string
5 bay leaves

Directions 
 *Note: You might not feel comfortable buying a big piece of meat and then boning it out yourself. That's ok. Have your butcher do it, but keep the bone. You paid for it. Have the butcher separate the bones at the joints.
Preheat the oven to 425 degrees F. 
Cut the lamb into 2 equal halves and butterfly each half. Remove any huge gobs of fat. Don't try to get it all. Fat tastes good and adds lots of moisture. Sprinkle each piece of the meat generously with salt, chopped rosemary, and sliced garlic. Drizzle the meat with olive oil. Massage the salt, rosemary, garlic and oil into the lamb. Be sure to try and get the cracks and crevices filled with the yummy tasting stuff. Roll each piece of lamb and tie with butcher twine. Sprinkle generously with salt. Reserve while you prepare the veggies. 

 For the vegetables:
Fill a bowl with water and squeeze the lemon into the water and add the lemon halves as well. Remove the tough outer leaves of the artichokes; stop when you get to the healthy, fresh light green looking leaves. Trim off any dark green or brown on the stem as well. Cut the in half and add to bowl of lemon water.

Remove the artichokes from the water and add with the fennel, potatoes, carrot , red pepper  ,garlic and crushed red pepper to a large roasting pan. Drizzle with olive oil and sprinkle generously with salt. Add the beef stock thyme and bay leaves. 
                                     
Nestle the lamb bones in the veggie mixture and place the 2 lamb roasts on the bones.

Drizzle with olive oil and place in the preheated oven. Roast the lamb for about 20 minutes, or until brown. Baste with juices and turn the lamb over and brown on the other side for about 20 minutes. Turn the lamb back over and baste again with the juices. Rearrange the veggies if they begin to burn. Reduce the heat to 350 degrees F and roast for another 60 minutes. Baste the lamb occasionally during the cooking process and add water to the pan if the liquid reduces too much.

Remove the lamb from the oven and let rest for 15 to 20 minutes.
Carve the lamb as desired and serve with the veggies and pan juices.

Buttermilk White/Dark Milk Chocolate Chunks Muffin

250g (1 2/3 cups) self-raising flour
165g (2/3 cup, very firmly packed) brown sugar
100g white chocolate, chopped into small chunks (about 2/3 cup chocolate chunks)
100g milk chocolate, chopped into small chunks (about 2/3 cup chocolate chunks)
100g butter (if using unsalted butter, add 1/8 teaspoon fine table salt)
62ml (1/4 cup) mild-flavoured oil (e.g. peanut or sunflower oil)
48g (1/2 cup, spooned in and levelled) cocoa powder
1 teaspoon (5ml) vanilla extract
2 large eggs (we use eggs with a minimum weight of 59g)
312ml (1 1/4 cups) buttermilk


LET’S DOIT:
Preheat oven to 200 degrees Celsius (180 degrees Celsius fan-forced). Move the oven rack to the middle of the oven.
Line 12 holes of a muffin pan (1/3 cup capacity holes) with patty/muffin cases. We use cases that measure 5cm across the base, 8cm across the top, and 3.5cm from base to top.Place flour and brown sugar in a large bowl and stir together, breaking up any lumps of sugar. Add chocolate chunks to the flour mixture and stir to distribute.
Place butter in a medium saucepan over low heat. Remove from heat when butter has just melted. Add oil, cocoa and vanilla to the melted butter and stir until smooth. While stirring, gradually add eggs and buttermilk and continue stirring until combined (the mixture might not be completely smooth — a slightly grainy mixture is fine).Pour wet ingredients onto dry ingredients.
Using a large spoon, fold ingredients together until just combined. Don't over mix the batter as this will result in tough muffins.
Divide mixture evenly between the 12 cases.
Bake muffins for about 18-22 minutes. When they are ready, the muffins should spring back when lightly pressed in the centre, and a thin-bladed knife inserted into the centre of a muffin will come out without any batter attached (be careful not to confuse a melted chocolate chunk with uncooked batter).
Allow muffins to cool in pan for five minutes, then serve or place on a wire rack to cool.
Store cooled muffins in an airtight container at room temperature for up to two days, or individually wrap in plastic wrap and freeze.

Apam Tapai Ubikayu

Apam Tapai Ubikayu

 Bahan-bahannya
 4 - 5 ketul tapai ubikayu(bila dilenyek lebih kurang 1 cawan)
 1 cawan gula(kurangkan sikit bergantung kepada kemanisan tapai)
 2 cawan tepung beras
 2 cawan air
 Sepeket eno
Caranya
 Blender tapai ubi, gula, tepung beras dan air.
 Masukkan dalam bekas bertutup dan perap selama sekurang-kurangnya 4 jam atau semalaman.
 Panaskan periuk pengukus dan pastikan air menggelegak.
 Masukkan eno dan kacau.  Sapu acuan dengan sedikit minyak.  Masukkan adunan sehingga hampir penuh.  Kukus selama 10 - 15minit.
 Keluarkan dan boleh dimakan dengan kelapa parut(kukus dahulu sekejap) bercampur dengan sedikit garam

Kuih Cara Berlauk

KUIH CARA BERLAUK

Bahan-Bahan
400 ml santan kotak KARA
350 ml air
300 gm tepung gandum
6 biji telur (saiz besar)
garam secukup rasa

Cara:
Satukan semua bahan dan tapis. Boleh dibubuh sedikit pewarna kuning jika mahu.
Untuk Intinya:
300 gm daging kisar
1 ulas bawang putih
2 hiris halia
sedikit rempah kari daging
secubit garam
1 sudu makan minyak masak utk menumis

Cara:
Gaulkan semua bahan. Panaskan minyak dan tumis daging tadi hingga masak. Ketepikan.

Untuk Hiasan
secukup cili merah (dihiris),
secukup daun saderi (sup)
Cara Membuat Kuih Cara Berlauk:
Panaskan acuan kuih bakar di atas dapur. Oleskan dgn sedikit minyak. Kemudian, tuangkan adunan tepung tadi dan tutup sebentar. Kemudian taburkan daging, daun saderi dan hirisan cili merah. Tutup dan biarkan kuih masak.

 Steamed pumpkin cake with coconut milk (Kue Talam Labu Kuning)
Ingredients for the Base layer:
180g steamed pumpkin
200ml thick coconut milk
50g rice flour
25g tapioca flour
90g sugar
2 whole eggs
½ teaspoon sea salt 

Vegetable oil for greasing
Pandan leaves for presentation

Ingredients for the top layer :
180ml thick coconut milk
40g rice flour
½ teaspoon sea salt 

 Preparation,
Making the base layer
Combine steamed pumpkin, coconut milk, rice flour, tapioca flour, sugar, eggs and sea salt in a jug of an electric blender and process until smooth. let the better breath before starts pouring into the cups mold.
Making the top layer :
In a bowl, combine coconut milk, rice flour and sea salt, stir well with a metal spoon until smooth. Set aside
Preparing the cups mold
Lightly grease each cup mold with vegetable oil and arrange on top of a tray. 

                                   
Direction
Set the steamer on top of the stove over medium heats and when the steamer is ready, slightly lower the heat.
Wrap the lid of the steamer with a clean kitchen towel in purpose to catch the steam so that the cakes would have smooth surface.
Fill each cup with the base layer mixture up to 2/3 parts of each cup.Steam around 5-6 cups in every batch about 8-10 minutes. if you have a large size steamer, you can make up the number in every batches.
When the base layer is done steaming and set, open the lid and carefully adding the coconut mixture top layer over the base layer with a metal spoon, steam about 3-4 minutes or until set.
Repeat the process until the batter of the two layer mixture are used.
When the cakes are cool to handle, remove from the cup mold.
Arrange in serving plate or bamboo tray lined with banana leaves and serve as snack or dessert.

Untuk Pastri :
400gram tepung gandum
1/2 cawan minyak
2 sudu besar marjerin
1/2 cawan air sejuk ( letak kiub ais)
Garam 
Cara-caranya":
Buat Doh Pastri dulu
1. Campurkan sedikit garam dalam air sejuk, masukkan marjerin di dalam tepung gandum dan sebatikan, kiranya akan jadi seperti berketul-ketul halus, macam serbuk roti, panaskan minyak dan curah di dalam tepung tadi, dengan menggunakan sudu, kacau ke seluruh adunan.
2. Selepas itu curahkan air sejuk tadi dan uli hingga menjadi doh, air jangan masuk semua, kira agak-agaklah kelembutan doh tu, setelah menjadi doh dan doh pemukaan doh agak licin,  masukkan doh ke dalam plastik bersih dan perap di dalam peti ais lebih kurang 1 hingga 2 jam, langkah ini penting bagi mendapatkan doh yang rangup dan senang untuk di canai nanti.
     3. Proses Mengelim
Keluarkan doh dari peti ais, dan bahagikan doh pada bahagian kecil, ikut lah nak buat karipap bentuk ape, bulat ke, love ke, bentuk biasa ke, kemudian terap doh bentuk bulat dengan menggunakan tapak tangan dan isikan inti, kelim seperti biasa, kalau nak guna acuan pun boleh. Ulang langkah tadi hingga doh habis. Panaskan minyak, pastikan minyak betul-betul panas dan tidak menggunakan api yang terlalu besar, goreng hingga keperangan. Angkat dan sedia untuk dihidangkan. Triple-Choc Muffin Cookies

Triple-Choc Muffin Cookies

Ingredients:
125g  butter,softend
½ teaspoon vanilla extract
1¼ cups(250g) frimly packed brown sugar
1 egg
1 cup(150g)plain flour
¼ cup(35g) self-raising  flour
1 teaspoon bicarbonate of soda
1/3 cup(35g)cocoa powder
1/2cup (95g) milk chocolate chips
75g white eating chocolate, chopped coarsely
75g dark eating chocolate , chopped coarsely

1.Preheat oven to 180/160 degree( fan-assisted ) . Grease two oven tray; line with baking parchment.
2. Beat butter, extract , sugar and egg in small bowl with electric mixer until smooth ; do not overbeat. Stir in sifted dry ingredients ,then raisins and all the chocolate.


3. Drop level tablespoons of mixture onto muffin  trays .
4. Bake cookies about 15 minutes . Stand cookies on muffin  trays  5 minutes; transfer to wire rack to cool.
